BEEF TENDERLOIN
Available in Choice or Premium Sterling Silver Grades

These make great tender yet lean roast. Perfect for hor durves or dinner portions. Easy to cook and slice. We recommend 8oz portions. Each Roast is hand cut and tied to your specifications  Also available pre-seasoned with our Italian Roast or Steak florentine rub on request. Our whole Tenderloins average 5 to 7 pounds however smaller sizes are available. 

  

Standing Rib Roast
Available in USDA Choice Grade

Nothing says traditional, like a Standing Rib Roast. Our Roasts are cut to order from full bone in loins to your specifications. Our butchers gladly "cut and tie" each cut for you. In doing so, we gently place a small cut along the bone and separate the rack of ribs from the meaty loin section. The rib rack is then firmly re-attached with butchers twine, the Ole Timey way. Cook your roast according to our favorite recipe with the string attached. Then, simply cut the twine after cooking to remove the rack and cut nice even portioned for your guest. This is an example of how our butchers go the extra mile to make your dinner extraordinary. Also available pre-seasoned with our Italian Roast or Steak florentine rub on request. Whole Roast are a total of 7 ribs with each rib bone weighing approximately 2 to 2 1/2 pounds. Please order by the rib. We recommend you allow for 1# per person due to the weigh of the bones. Ribs can be left attached if your desire or french for those desiring this presentation.
*For larger crowds, the boneless version, known as Prime Rib, is another option.  

Pork Crown Roast
Ole Timey offers only USDA grade A pork products

What a spectacular presentation! Pork crown roast is one of our specialties. Crown Roast are comprised of a full bone in pork loin expertly cut in a manner that allows the loin to be shaped in a circle. available stuffed or not stuffed. Our stuffing is a homemade blend of bread crumbs, cornbread,  seasonings, chicken stock and pork sausage.

Our lamb has a sweet robust flavor that only New Zealand Lamb posesses. The racks are frenched with chime bone removed. These are perfect for braising or cutting into lolipop chops! Boneless legs are well trimmed utilizing only the center portion. These are average 5#weight.  Did you know New Zealand Lamb is....
